6) Jicaro Lodge: An Island Unto Itself

When British advertising executive Karen Emanuel was on holiday, she saw the sign “Island for Sale” in Lake Managua, and couldn’t resist. She had fallen in love with Nicaragua and fantasized about creating an eco-lodge there.

Five years later, the Jicaro Lodge, managed by the award-winning Cayuga Sustainable Hospitality Collection, a company specializing in managing ecologically sustainable hotels, is in business.

Just a short ferry ride from the colonial city of Granada, the island is the lodge, just nine two-story casitas, a restaurant, spa and pool. Designed to fit into the landscape and employing sustainable materials, the Jicaro Lodge aims to make stays as relaxing and comfortable as possible. With hammocks on the front decks and early morning coffee or tea delivered to the door, it’s easy to forget there’s no air conditioning. Dinners are made-to-order from market ingredients.

Kayaking, trekking and artisanal fishing tours are offered. As are treks to a local volcano.
